Brook Trout with Apples
Ingredients:
2 whole brook trout, cleaned, heads and fins removed.
2 pieces parchment paper cut into 12 inch circles
4 slices lemon
4 sprigs fresh or 1 t. dried thyme
1 apple, peeled, cored, quartered and sliced
2-3 scallions, chopped
2 T. butter
salt and pepper
Preparation:
Preheat oven to 400°F.
Place each trout, opened, in the center of each piece of parchment paper.
Place 2 slices of lemon, 2 sprigs of fresh thyme (or 1/2 t dried), half of the apples and scallions, and 1 T. butter inside each trout. Add salt and pepper to taste.
Close up trouts. Fold paper in half over fish, then make small overlapping folds along the edge to seal.
Place fish in paper in an 11x14" baking pan, and bake for 20 minutes. Serve inside paper.
