Apple and Sausage Pie

Ingredients
4 T unsalted butter
1/2 C all-purpose flour
1-2 T water

1/2 lb. sweet sausage
1 T butter
1 apple (McIntosh or similar), peeled, cored, and diced
2 egg yolks
1 whole egg
1 C heavy cream
salt
1/2 C shredded sharp cheddar cheese

Preparation
Preheat oven to 350°

Combine 4T butter with the flour. Mix together by hand until mixure has the consistency of coarse bread crumbs. Add 1-2 T cold water to bind. Refrigerate for 30 minutes.

Remove sausage from casing and crumble. In a skillet over medium-high heat, sauté the sausage until cooked through. Drain well and set aside.

In a separate skillet, heat 1T butter and sauté the apple for about a minute, until softened. Set aside.

Combine egg yolks and egg with cream and pinch of salt.

Roll out dough and press into a 9-inch pie tin. Place sausage in bottom of pie and top with apples. Distribute cheese evenly over the apples and then top with the egg mixture.

Bake for 50-60 minutes until pie is somewhat firm when touched. Remove from oven and let the pie cool for a few minutes. Serve warm.

Serves 4-6.
