Oatmeal Pancakes with Apples and Pecans
Ingredients
1 1/2 C. oatmeal
1 1/2 C. boiling water
1 egg
1 C. flour
2 T. baking powder
salt
1/4 C. sugar
1 C. milk
1/4 C. butter, melted
3 apples, peeled, cored and chopped
1/2 C. pecans, chopped
2 T. butter
Preparation
1. Combine oatmeal and boiling water. Let stand 5 minutes.
2. Add egg, flour, baking powder, pinch of salt, and sugar to the oatmeal. Mix together.
3. Stir in milk, 1/4 cup butter, apples, and pecans.
4. Melt 2T. butter over medium heat in a large skillet or griddle.
5. Spoon in pancake mixture to desired size. Flip pancakes when bubbles form around the edges and in the center. Cook for additional minute.
6. Remove and serve with maple syrup or alternative topping.
Makes 15 3" pancakes.
