Apple Fritters

Ingredients
3/4 C. yellow cornmeal
1/2 C. all-purpose flour
2 T. baking powder
6 T. sugar
Pinch of salt
1 egg
1/2 C. milk
1 1/2 C. vegetable oil (for frying)
1 apple, peeled, cored, and chopped
2 T. vegetable oil
Confectioners' sugar


Preparation
1. Combine the cornmeal, flour, baking powder, salt and sugar in a medium sized bowl.
2. Add egg and milk to the bowl and mix together.
3. Add in apple, mix, and let sit for 10 minutes.
4. In a 1-quart saucepan, heat 1 1/2 cups oil over medium-high heat. Carefully watch the heat to not get oil to smoking point.
5. When the oil starts to crackle drop better into the oil 1 tablespoon at a time. Fry up only 3 fritters maximum at any time.
6. Flip the fritters over and remove to a paper towl to remove excess oil.
7. Sprinkle with confectioners' sugar and serve.

Makes 18 fritters.
