Winter Salad with Apples and White Chedder

Ingredients:
Dressing
2 1/2 T. cider vinegar or white wine vinegar
6 T. extra virgin olive oil or walnut oil
Salt
Freshly ground pepper

Salad
1 small head radicchio, leaves separated and cut into strips
2 heads Belgian endive, leaves separated and cut into strips
1 small head frisee, tough stems removed, torn into small pieces
1 tart apple (Granny Smith, Newtown Pippin, Stayman Winesap), unpeeled, quartered, cored and thinly sliced
1 sweet apple (Fuji, Pink Lady, Golden Delicious, McIntosh), unpeeled, quartered, cored and thinly sliced
1/2 C. walnut halves, toasted
Wedge of sharp white Cheddar cheese

Preparation:
To make the dressing, whisk together the vinegar, olive oil, salt and pepper in a small bowl.

To make the salad, combine the radicchio, endive, and frisee in a large salad bowl. Toss well. Add the apples and but and drizzle with the dressing. Toss to coat. Using a vegetable peeler or sharp paring knife, shave curls of the Cheddar cheese over the top.

Serves 6.
