Ginger Apple Applesauce
Ingredients:
3 pounds tart apples, stems removed
1 4-6 ounce piece fresh ginger, peeled and coarsely chopped, or 2-3 T ground ginger
2 C cranberry juice
Preparation:
1) Place the apples in a 6 quart pot
2) Add the fresh ginger. If you are using ground ginger, wait until the end to add
3) Add cranberry juice
4) Cook on low heat for 45 minutes to 1 hour, stirring frequently. Add water if necessary.
5) When the apples are cooked through and soft, force through a sieve or stainless steel strainer into a bowl. Add ground ginger now if using.
6) Allow to cool. Serve warm or cold.
Serves 15. Preparation time is 1 hour 15 minutes.
